Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, chopped
- 1 cup green beans, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can (15 oz) diced tomatoes
- 1 cup cooked pasta
- 1 can (15 oz) kidney beans, rinsed
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pot. Sauté onion, carrots, and celery until softened.
- Add zucchini, green beans, and garlic; cook for 3 minutes.
- Stir in broth, tomatoes, and oregano. Simmer for 20 minutes.
- Add pasta and beans. Cook for another 5 minutes. Season and serve.
