Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup dried lentils
- 4 cups vegetable broth
- 1 can (15 oz) diced tomatoes
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pot. Sauté onion, carrots, and celery until soft.
- Add lentils, broth, tomatoes, and spices.
- Simmer for 25-30 minutes until lentils are tender. Adjust seasoning.
