Ingredients:
- 2 tbsp butter
- 2 leeks, sliced
- 4 potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions:
- Sauté leeks in butter until soft.
- Add potatoes and broth. Simmer until potatoes are tender.
- Blend the soup. Stir in cream and season.
