Potato Leek Soup

Ingredients:

  • 2 tbsp butter
  • 2 leeks, sliced
  • 4 potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions:

  1. Sauté leeks in butter until soft.
  2. Add potatoes and broth. Simmer until potatoes are tender.
  3. Blend the soup. Stir in cream and season.
