Ingredients:
- 2 tbsp olive oil
- 1 lb beef stew meat, cubed
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 cup pearl barley
- 1 can (14 oz) diced tomatoes
- 1 tsp thyme
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pot. Brown the beef, then remove and set aside.
- Sauté onion, carrots, celery, and garlic until softened.
- Add beef back to the pot, along with broth, barley, tomatoes, and thyme. Simmer for 40 minutes.
- Adjust seasoning and serve.
