Beef and Barley Soup

Ingredients:

  • 2 tbsp olive oil
  • 1 lb beef stew meat, cubed
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 cup pearl barley
  • 1 can (14 oz) diced tomatoes
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a pot. Brown the beef, then remove and set aside.
  2. Sauté onion, carrots, celery, and garlic until softened.
  3. Add beef back to the pot, along with broth, barley, tomatoes, and thyme. Simmer for 40 minutes.
  4. Adjust seasoning and serve.
