Gazpacho (Cold Spanish Tomato Soup)

Ingredients:

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and diced
  • 1 red bell pepper, chopped
  • 2 garlic cloves
  • 3 cups tomato juice
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions:

  1. Blend all ingredients in a blender until smooth.
  2. Chill for at least 2 hours. Serve cold with crusty bread.
