Ingredients:
- 6 ripe tomatoes, chopped
- 1 cucumber, peeled and diced
- 1 red bell pepper, chopped
- 2 garlic cloves
- 3 cups tomato juice
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Instructions:
- Blend all ingredients in a blender until smooth.
- Chill for at least 2 hours. Serve cold with crusty bread.
