Butternut Squash Soup

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 cups butternut squash, peeled and diced
  • 3 cups vegetable broth
  • 1/2 cup coconut milk
  • 1 tsp cinnamon
  • Salt and pepper to taste

Instructions:

  1. Sauté onion in olive oil until soft. Add squash and cook for 5 minutes.
  2. Pour in broth and simmer until squash is tender.
  3. Blend until smooth. Stir in coconut milk and cinnamon. Season and serve.
