Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 4 cups carrots, peeled and chopped
- 1-inch ginger, grated
- 4 cups vegetable broth
- 1/2 cup heavy cream or coconut milk
- Salt and pepper to taste
Instructions:
- Sauté onion in olive oil until soft. Add carrots and ginger; cook for 5 minutes.
- Pour in broth and simmer until carrots are tender.
- Blend until smooth. Stir in cream or coconut milk. Season and serve.
