Zuppa Toscana (Tuscan Soup)

Ingredients:

  • 1 lb Italian sausage
  • 1 onion, diced
  • 2 potatoes, diced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions:

  1. Brown sausage in a pot, then remove and set aside.
  2. Sauté onion, then add potatoes and broth. Simmer until potatoes are tender.
  3. Stir in kale, cream, and sausage. Simmer for 5 minutes. Serve hot.
