Ingredients:
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 1/2 head cabbage, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp paprika
- Salt and pepper to taste
Instructions:
- Sauté onion and carrots in olive oil until softened.
- Add cabbage, tomatoes, and broth. Simmer for 20 minutes.
