Zucchini Noodle Shrimp Scampi

This low-carb twist on a classic Italian dish swaps pasta for spiralized zucchini, cutting calories while adding nutrients. The garlicky shrimp and light lemon sauce make this a refreshing yet satisfying meal that’s perfect for warm evenings.

Ingredients:

  • 4 medium zucchini, spiralized

  • 1 lb large shrimp, peeled and deveined

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 1/4 cup low-sodium chicken broth

  • Juice of 1 lemon

  • 1/4 cup fresh parsley, chopped

  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.

  2. Add shrimp to the skillet and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.

  3. Add chicken broth and lemon juice to the skillet, simmer for 2 minutes.

  4. Add zucchini noodles and cook for 2-3 minutes until slightly tender.

  5. Return shrimp to the skillet, toss everything together, and heat through.

  6. Season with salt and pepper, garnish with parsley, and serve immediately.
