Turkey and Sweet Potato Chili

This comforting chili swaps beef for lean turkey and incorporates sweet potatoes for added fiber and nutrients. It’s a warming, filling meal that’s perfect for cooler evenings and meal prep alike.

Ingredients:

  • 1 lb lean ground turkey

  • 1 large sweet potato, diced

  • 1 can kidney beans, drained and rinsed

  • 1 can diced tomatoes

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 2 tbsp chili powder

  • 1 tsp cumin

  • 1 cup low-sodium chicken broth

  • Greek yogurt and cilantro for topping

  • Salt and pepper to taste

Instructions:

  1. In a large pot, brown turkey over medium heat.

  2. Add onion and garlic, cook until softened.

  3. Stir in sweet potato, beans, tomatoes, chili powder, and cumin.

  4. Pour in chicken broth and bring to a boil.

  5. Reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.

  6. Season with salt and pepper to taste.

  7. Serve hot, topped with a dollop of Greek yogurt and cilantro.
