Ingredients:

One head cauliflower, riced

Two eggs, beaten

1 cup mixed vegetables (peas, carrots, corn)

Two cloves garlic, minced

1 tbsp ginger, grated

2 tbsp low-sodium soy sauce

1 tbsp sesame oil

Two green onions, chopped

1 tbsp sesame seeds
Instructions:

In a large skillet, scramble eggs and set aside.

In the same skillet, sauté garlic and ginger in sesame oil.

Add mixed vegetables and cook until tender.

Add cauliflower rice and stir-fry for 5-7 minutes.
