Baked Cod with Lemony Spinach

Ingredients:

  • Four cod fillets

  • 4 cups fresh spinach

  • One lemon, juiced and zested

  • 2 tbsp olive oil

  • Two cloves garlic, minced

  • 1 tbsp capers

  • Salt and pepper to taste

  • Lemon slices for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Mix olive oil, lemon juice, zest, and garlic in a bowl.

  3. Place spinach in a baking dish and top with cod fillets.

  4. Pour the lemon mixture over the fish and spinach.
