Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 4 cups butternut squash, peeled and diced
- 3 cups vegetable broth
- 1/2 cup coconut milk
- 1 tsp cinnamon
- Salt and pepper to taste
Instructions:
- Sauté onion in olive oil until soft. Add squash and cook for 5 minutes.
- Pour in broth and simmer until squash is tender.
- Blend until smooth. Stir in coconut milk and cinnamon. Season and serve.
