Carrot Ginger Soup

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 cups carrots, peeled and chopped
  • 1-inch ginger, grated
  • 4 cups vegetable broth
  • 1/2 cup heavy cream or coconut milk
  • Salt and pepper to taste

Instructions:

  1. Sauté onion in olive oil until soft. Add carrots and ginger; cook for 5 minutes.
  2. Pour in broth and simmer until carrots are tender.
  3. Blend until smooth. Stir in cream or coconut milk. Season and serve.
