Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 2 cups shredded chicken (cooked)
- 1 cup egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened.
- Add garlic and cook for 1 minute.
- Pour in chicken broth, bring to a boil, and reduce heat to simmer.
- Add chicken and noodles; cook for 7-10 minutes until noodles are tender.
- Season with salt and pepper. Garnish with parsley.
