  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place the squash halves cut-side up on a baking sheet.
  3. Bake in preheated oven for 30 minutes, or until slightly softened.
  4. While the squash is baking, heat the olive oil in a large skillet over medium heat.
  5. Add the sausage and cook, breaking it up with a spoon, until browned.
  6. Add the onion and garlic and cook until softened, about 5 minutes.
  7. Pour in the marinara sauce and stir in the Italian seasoning. Simmer for 10 minutes to allow the flavors to meld.
  8. Remove from heat and stir in the Parmesan cheese, salt, and pepper.
  9. Remove the squash from the oven and fill each half with the sausage mixture.
  10. Top with shredded mozzarella cheese.
  11. Return to the oven and bake for 15-20 minutes, or until the squash is tender, the filling is heated through and the cheese is melted and bubbly.
  12. Garnish with fresh basil or parsley.
