Pumpkin Deviled Eggs

These savory bites are perfect for a Halloween or fall-themed appetizer, combining the delicious flavors of traditional deviled eggs with a fun, seasonal presentation. The filling is shaped and scored to look like pumpkins, and a small piece of green onion or chive is used to mimic the pumpkin stem. These eggs are easy to prepare and make a cute, elegant addition to any Halloween party spread, adding a touch of sophistication to the spooky season.

Ingredients:

  • 6 hard-boiled eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • Salt and pepper to taste
  • Paprika (for color)
  • Small pieces of chives or green onions (for pumpkin stems)

Recipe:

  1. Peel the hard-boiled eggs and cut them in half lengthwise. Remove the yolks and place them in a bowl.
  2. Mash the yolks with mayonnaise, Dijon mustard, vinegar, salt, and pepper until smooth.
  3. Add a small pinch of paprika to tint the yolk mixture orange.
  4. Spoon or pipe the yolk mixture back into the egg whites.
  5. Use a toothpick to gently score lines in the filling to resemble pumpkin ridges.
  6. Place a small piece of chive or green onion in the center of each egg to act as the pumpkin stem.
  7.  Chill in the refrigerator until ready to serve.
