Pumpkin Soup

Ingredients:

  • 2 tbsp butter
  • 1 onion, chopped
  • 4 cups pumpkin puree
  • 3 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp ground nutmeg
  • Salt and pepper to taste

Instructions:

  1. Sauté onion in butter until soft.
  2. Add pumpkin and broth; simmer for 15 minutes.
  3. Stir in cream and nutmeg. Blend until smooth. Season and serve.
