Spicy Thai Coconut Soup (Tom Kha Gai)

ingredients:

  • 2 cups coconut milk
  • 1 cup chicken broth
  • 1 tbsp red curry paste
  • 1 chicken breast, thinly sliced
  • 1 cup mushrooms, sliced
  • 2 tbsp fish sauce
  • 1 tbsp lime juice
  • Fresh cilantro for garnish

Instructions:

  1. Heat coconut milk and chicken broth in a pot.
  2. Stir in red curry paste. Add chicken and mushrooms; cook until chicken is done.
  3. Stir in fish sauce and lime juice. Garnish with cilantro.
