Ingredients:
- 2 tbsp butter
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cups dried split peas, rinsed
- 6 cups chicken or vegetable broth
- 1 ham hock (optional)
- 1 tsp thyme
- Salt and pepper to taste
Instructions:
- Sauté onion, carrots, and celery in butter until softened.
- Add split peas, broth, and ham hock (if using). Simmer for 1 hour.
- Remove ham hock, shred any meat, and return to the soup. Blend partially for texture.
