Split Pea Soup

Ingredients:

  • 2 tbsp butter
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups dried split peas, rinsed
  • 6 cups chicken or vegetable broth
  • 1 ham hock (optional)
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions:

  1. Sauté onion, carrots, and celery in butter until softened.
  2. Add split peas, broth, and ham hock (if using). Simmer for 1 hour.
  3. Remove ham hock, shred any meat, and return to the soup. Blend partially for texture.
