Tomato Basil Soup

Ingredients:

  • 2 tbsp butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups canned crushed tomatoes
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste

Instructions:

  1. Melt butter in a pot and sauté onion and garlic until soft.
  2. Add tomatoes and vegetable broth. Simmer for 20 minutes.
  3. Stir in heavy cream and basil. Blend until smooth using an immersion blender.
  4. Season with salt and pepper. Serve warm.
